This Low-Carb Crack Chicken Casserole is super easy to make. It literally takes about 5 minutes to whip up. To get this ready to bake so quickly, I use rotisserie chicken. It is a HUGE time saver! I always have some pulled rotisserie chicken in the freezer for easy casseroles like this one. I also buy precooked real bacon bits in bulk at Costco. Perfect!







Low Carb Crack Chicken Casserole

Ingredients

  • 2 cups cooked chopped chicken
  • 1/2 pound bacon, cooked and chopped
  • 1 cup shredded cheddar cheese
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/2 cup prepared Ranch dressing

Instructions

  1. Preheat oven to 350ºF. Lightly spray an 8x8-inch or 11x7-inch pan with cooking spray.
  2. Spread cooked chicken and cooked bacon in bottom of prepared pan. Top with shredded cheese.
  3. Whisk together eggs, heavy cream and ranch dressing. Pour on top of chicken mixture.
  4. Bake, uncovered, for 30 to 35 minutes.
